You can sow the beetroot outdoors from March / April - however, you must then protect the plants from ground frost with a fleece (harvest time approx. July / August). However, June is generally the ideal time for cultivation. Plant beetroot at this time, you can harvest the vegetables in October / November. Which is why the beetroot is also one of the late autumn vegetables.
Beetroot should never be grown in the immediate vicinity of spinach, potatoes, tomatoes, chives, parsley and Swiss chard. Because these vegetables don't harmonize with each other. It is better to plant in mixed culture with onions, caraway seeds, beans, zucchini, cabbage or salads.

You can then store the beetroot in a cool cellar room for a few weeks after harvesting.
